The Ingredients

  • 4 fresh mackerel fillets
  • 2 lemons (one for juice and one for slices)
  • 3 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • Salt and pepper to taste

The Method

  • Serves 2
  • Prepare the Marinade: In a bowl, mix the juice of one lemon, olive oil, chopped parsley, dill, thyme, salt, and pepper.
  • Marinate the Mackerel: Brush the mackerel fillets with the marinade. Make sure each fillet is well-coated. Let the fillets marinate for at least 30 minutes in the refrigerator.
  • Preheat the Grill: Preheat your grill to medium-high heat.
  • Grill the Mackerel: Place the marinated mackerel fillets on the grill, skin-side down. Grill for about 4-5 minutes on each side, or until the fish is cooked through and has a nice char.
  • Serve: Transfer the grilled mackerel to a serving plate. Garnish with slices of lemon and additional fresh herbs if desired. Serve with a side salad or roasted vegetables.
