The Ingredients

  • 4 cod fillets (about 150-200g each)
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 tablespoons fresh rosemary leaves, finely chopped
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

The Method

  • Serves 4
  • Prepare the Grill: Preheat your grill to medium-high heat (around 200-220°C).
  • Prepare the Garlic Crumbs: In a small bowl, mix together the minced garlic, breadcrumbs, chopped rosemary leaves, lemon zest, olive oil, salt, and pepper until well combined.
  • Prepare the Cod Fillets: Pat the cod fillets dry with paper towels to remove any excess moisture. Season both sides of the cod fillets with salt and pepper to taste.
  • Grill the Cod Fillets: Place the seasoned cod fillets on the preheated grill. Grill for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
  • Add the Garlic Crumbs: Carefully remove the cod fillets from the grill and transfer them to a serving platter. Generously sprinkle the garlic crumb mixture over the top of each cod fillet, pressing gently to adhere.
  • Finish Grilling: Return the cod fillets to the grill and cook for an additional 2-3 minutes, or until the garlic crumbs are golden brown and crispy.
  • Serve: Once the cod fillets are cooked through and the garlic crumbs are crispy, remove them from the grill. Serve immediately with lemon wedges on the side for squeezing over the fish. Enjoy your grilled cod fillets with garlic crumbs and rosemary!
