The Ingredients

  • For the Cod
  • 4 cod fillets (about 150-200g each)
  • Salt and pepper, to taste
  • 1 lemon, sliced (for garnish)
  • For the Mornay Sauce
  • 30g butter
  • 30g all-purpose flour
  • 300ml milk
  • 100g Gruyère cheese, grated
  • 50g Parmesan cheese, grated
  • Salt, pepper, and nutmeg, to taste
  • For the Topping:
  • 50g breadcrumbs
  • 20g Parmesan cheese, grated
  • Fresh parsley, chopped (for garnish)

The Method

  • Serves 4
  • Preheat the Oven: Preheat your oven to 200°C (400°F).
  • Prepare the Cod: Season the cod fillets with salt and pepper on both sides. Place them in a baking dish or on a baking sheet lined with parchment paper. Arrange lemon slices on top of the fillets if desired.
  • Make the Mornay Sauce: In a saucepan, melt the butter over medium heat. Stir in the flour to form a roux, and cook for a few minutes until lightly golden brown. Gradually whisk in the milk, stirring constantly to avoid lumps. Cook until the sauce thickens, then add the grated Gruyère and Parmesan cheeses. Stir until the cheese is melted and the sauce is smooth. Season with salt, pepper, and nutmeg to taste.
  • Top the Cod: Pour the Mornay sauce over the cod fillets, covering them evenly.
  • Prepare the Topping: In a small bowl, combine the breadcrumbs and grated Parmesan cheese. Sprinkle the mixture evenly over the Mornay sauce.
  • Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cod is cooked through and the topping is golden and crispy.
  • Serve: Remove from the oven and garnish with chopped fresh parsley. Serve hot, accompanied by your favorite side dishes such as steamed vegetables, mashed potatoes, or crusty bread.
